Homemade Yeast-Free Pizza

My hubby can't have yeast...so there's goes bread and pizza right?

NO WAY! My goal is to make his diet as "normal" as possible despite not being able to eat yeast, simple sugars, simple carbs and cow dairy.

I found a recipe online for Yeast-free Pizza Dough which works very well. It's definately a thin crust pizza, which he loves. I will post the recipe at the end of this posting.



I had some leftover mexican seasoned chicken from last night so I chopped it up with some fresh herbs and a fresh tomato.



I shredded some cheddar goat cheese.


First make the dough and roll it out onto a pizza pan.

I bake it for 10 minutes in a 400 degree oven.


Then top with marinara (or your favorite sauce), add cheese, toppings and some more cheese.





Bake for another 10-15 minutes.

Four pizzas for four boys





They LOVE cheese pizza. Often I put 2 or 3 different types of cheese on them, if the little buggers haven't eaten all the cheese in the fridge! Sometimes I add chicken and caremelized onions.





YEAST FREE DOUGH RECIPE

3 cups spelt or whole wheat pastry flour

3 cups bread flour (I use whole wheat bread flour)

1/4 cup cornmeal

2 tsp. baking powder

1 tsp. sea salt

1 1/2 cups water

Combine dry ingredients. Add in the water, mixing with your hands till dough forms a ball.

Press into a non stick cookie sheet or pizza pan, or stone.

Bake crust for 10 minutes @ 400.

Add toppings and bake another 15 minutes.

Note: I have skipped the first baking and just topped the crust and baked right away with good results.

The little boys bedroom makeover....Part I


We used to have all four boys in a large bedroom in the basement. They loved bunking together. But, with our re-carpeting escapades in the basement, it seemed the perfect opportunity to split them up and move them around.

So, our guest room became the little boys bedroom. The playroom became the guest room. And the all boy's bedroom became half playroom, half older boy's bedroom.

Did I confuse you yet?

What a great arrangement for all! The little boy's room was a sad yellow color. Believe it or not, it was a shade of Martha Stewart paint, but it was not "a good thing"


We (that is, I) decided on the shade of "very palest of blue" (I made that name up) It also happened to be an extra gallon of paint leftover from our basement re-painting escapade (which involved intensive wall paper removal, but that's another story, and I have no pictures of it!)

But, nonetheless, it's a lovely shade of pale blue. We moved the red curtains from downstairs to their room. We (and by we, I mean BILL) have YET, to hang the curtains. My sweet mom-in-law picked up the wire curtain holder thingies from IKEA. I'll take a picture of that and show you.

I took three days for my painting project, HEY, I'm still recovering from Bacterial Meningitis, you know? I'm going to milk that one for all it's worth!! I should say, it was really 3 mornings. I do better in the morning and try to rest in the afternoon. The operative word there was "try." It doesn't always work with a houseful of males.

NOTE: Look through the doorway, my BED is made!! That is ONE thing I do every day. I read somewhere, one of those wonderful pieces of advice that you never forget....if you make your bed, at least 80% of your room is neat. So, if you are like me and still have the ironing board out with some laundry on it, at least 80% of my room IS clean!

I'm very happy with the results. Although, I'm not quite finished yet. I still have to paint the clouds on the ceiling. The ceiling is also blue and has a few old water stains on it. I have to prime it and paint some fluffy clouds. That's me being "cleverly lazy." I REALLY don't want to paint the entire ceiling, that's hard, it hurts your neck, I'd rather do clouds, they're pretty. It will give the boys something to stare at in the morning before they get out of bed.



I've always had a dream to do a mural. I sort of did one in the school room.


The former owners had painted this room an awful dark mint green, the ENTIRE room was that color! There were stenciled fish on the back wall. I left the fish and created an under the sea mural as you can see on the back wall on either side of the window.

I'll post some picture of my clouds if I get to them before we start school!

Next, we'll have more food, I PROMISE!!

Peach Berry Pie...and an EASY Pie Crust!



Easy Pie Crust: 1 cup flour, 1/2 cup shortening (the good kind, and by good, I mean the kind without hydrogenated oil) 1/4 cup water



1. Cut the shortening into the flour till it resembles coarse crumbs.



2. Blend water in till dough just comes together in a ball.



3. Let rest in the refridgerator for 30 minutes.



4. Roll out on well floured surface.





Press into pie plate.






Peel the peaches. You'll need about 7 or more depending on how big they are.





Slice the peaches into a bowl. Mix in 6 Tbsp. cornstarch, 1/2 tsp cinnamon, 1 tsp vanilla, 1/2 cup sugar. Add any other fruit you like. Mix well and fill pie plate.


To make it sugar-free, I replace the sugar by drizzling the top with agave nectar before baking.



Bake at 450 for 15 minutes and 350 for about 20-30. Till bubbly and done!

Allow to cool slightly so it can set a bit.

Of course, we can't wait, and so we have a messy wet pie plate.


This is why I now make 2 (two) pies at a time.


There's just too much fighting going on over one pie. It's not worth it.

Berries...I think it may be a little late for this one...





July was berry month on our property, actually, it was more like 2-3 weeks. We have an one acre property with wild berry bushes hidden all over.






The first time I found a wild raspberry bush 2 year ago, I ate a raspberry and then ran inside to tell Liam, just in case it was poisonous! Well, it wasn't, I survived and starting picking! I don't know what happened last year. I kind of missed most of them. Maybe we were gone? It's not a long season and if you aren't looking for them, you almost miss em'.







But this year, it was a record harvest! Maybe not picking them last year helped this year's crop. Nevertheless, I had a blast! I devised a picking basket that I could tie around my neck so I had my hands free.





A pre-requisite in picking wild berries is long sleeves and pants. My hands were scratched up for weeks! Also, one most be fearless of pricker bushes and spiders and heights (in my yard) and crawling through the underbrush. But, it is all well worth all the difficulties!


Berry bushes have been popping up unexpectedly all over my property. One ended up inside my fenced in garden! Wonderful placement! I reaped over 3 harvests this year.



I just love their colors and they just melt in your mouth!

allowed them to dry,






Once frozen (don't leave them overnight) I slipped them into freezer bags and stored them in my freezer for another day.






I also froze strawberries that we picked and Jersey blueberries that we bought at a local fruit farm for a great price.




I made some raspberry pies, threw the berries in a peach pie, they also made it into some muffins, fruit salad, and into our cereal in the morning. So versatile and best of all, FREE! Can't get any more organic than that folks!!

Ooooh peach pie, that should be up soon!

The Turkeys....watching turkeys...


We had an extra "turkey"(sorry Kyle) for the long weekend.


I have never seen any wild turkeys walking through our property yet in all of our 2+ years living here.

It was a great 15 minute distraction. I guess we'll have some future hunters?


I realy wish that turkeys ate weeds. Bugs are good, but those weeds!
