Can you tell I really really like these?
They are really super easy to make. Slice the potatoes, place on an olive-oiled plate, drizzle with olive oil, microwave for about 7-10ish minutes, sprinkle with a bit of salt or any seasoning you like, and VOILA, crunchy, delicious, healthy potato chips!
Wash your potatoes. I used a really big one that I had from a 50 pound bag of Grade B (does that stand for Big?) potatoes.
Leave the skin on!
Use a mandoline if you have one, or slice very thinly with a sharp knife.
Lightly brush some olive oil on a plate. (I use organic extra virgin olive oil)
Arrange the potatoes in a single layer. You can salt and season them now or later.
Microwave on HIGH for 7-9 minutes and then check on them. See if they are hard. You don't want flimsy chips, go for crunchy!
Let them cool, if you can help it.
They are fantastic. I'm a huge fan of crunchy kettle like chips. I find that we can eat one bag in one sitting. When I say "we", I mean my 4 boys and I. Really! Okay, I could eat a whole bag by myself. I try not to. At least when you make your own chips, you know what's going into them.
Nothing "hard to pronounce" in them.
Get creative! Add some cajun seasoning, garlic and salt, or try a vinegar chip.
They really are too good, beware!

they're made from a kind of indian cottage cheese and are in a sugar syrup. i searched and i found a recipe-you can easily make it, but it is a little time consuming
